Champagne
Sparkling wines are wines with a high level of carbon dioxide them, resulting in them being fizzy. The most famous variety is Champagne, which is produced in the eponymus region in the North of France. Here the wine goes through a 'Secondary' fermentation, where still wine is bottled with yeast and sugar under pressure. As the yeast consumes the sugar, carbon dioxide is formed and dissolves into the wine creating the bubbles.
Other notable Sparkling wines are Cava from Spain, which is produced in a similar fashion and Prosecco from Italy, which is produced via the Charmat or tank method, where the Secondary fermentation takes place in stainless steel tanks rather than bottles.
