10 years of maturation in Bourbon casks with the remaining period of 30 months finishing in Hermitage casks, which is a french red wine from the Rhone region made from the Syrah grape or shiraz as it is known in the new world.
Nose: Smoky cherry compote, stewed red rhubarb tops, polished wood, salty cranberry sauce, some earthy fruits of the forest, aromatic wood bark, dusting of salty cocoa, pink grapefruit & sooty pink wafers.
Palate: Big peppery red fruit delivery (think fruits of the forest and winter cranberry on a earthy forest floor) aniseed, fruit infusions black tea, gunpowder, meaty/salted cured ham. Some sweetness well balanced by dry grape skin tannin and smoke.
Finish: Salted cranberry, spicy black pepper on cured meat, red liquorice, drying into black grape skins, stewed black plums and coal fire sooty smoke.
A superb example of Distillery style and influence of cask finish working in perfect harmony, well balanced levels of peppery smoke, spicy fruit, aromatic oak and seems to be both sweet and dry in the same mouthfull?
