A limited edition Peated Whisky (14.8ppm) from Knockdhu which is named after the spade used to remove the top rooty layer from the peat bogs.
Nose: lemons on sooty ash peat fire, smoked seaweed, salted vanilla fudge, floral notes (lavender) baked french cheese with herbs.
Palate: Sea salted lemon cheesecake, chilli flake heat, seaweed with vanilla, aromatic herbs and vegetal notes, oily yet refreshing body and lingering smoke.
Finish: White pepper, lemon peel, salty seaweed, root ginger, sweet brine and refreshing peat infused finish.
There is an elegance and freshness to this medium peated Highland malt that has none of the TCP or overtly medicinal peat notes of Islay but a more refreshing approach.Think lemon meringue pie buried in a peat ash mound.
