The Highland Park distillery is the most northerly distillery in the world. It is located to the west of Kirkwall on the island of Orkney. The distillery was founded in the late eighteenth century by an Orcadian smuggler called Magnus Eunson. He was also a church officer and apparently he used to hide whisky under the church pulpit and in coffins as he was illegally distilling whisky.
Highland Park use hard water for their whisky and the water is taken from Cattie Maggie’s Springs. Highland Park use local heather peat which gives the whisky a heathery smokiness. Highland Park produce a variety of aged whiskies from 12, 18 and 25 years. They also do a few special vintage bottles. Highland Park also has a fantastic visitor centre that is worth a visit.
